Super Sweet Potato Bites

Ingredients
  

  • 2 sweet potatoes
  • 1 lime juice
  • 2 avocados
  • 1 bunch cilantro
  • 4 slices of bacon
  • 1/2 cup feta
  • Olive oil
  • Salt and pepper
  • 1 tsp Childlife Essentials First Defense

Instructions
 

  • Preheat the oven to 400°. Wash and dry two sweet potatoes, and slice them into 1/2-inch thick rounds. Lightly coat with olive oil, sprinkle with salt, and place on a baking sheet.
  • Bake for 20 minutes, flip, then bake for another 10 to 15 minutes, or until rounds are cooked through and crispy on the edges. Place sweet potato rounds on a serving platter and allow them to cool.
  • Cook 4 slices of bacon over medium heat, flipping occasionally, until crispy, about 5 minutes. Transfer bacon to a cutting board and chop into pieces once cool enough to handle. Roughly chop the cilantro and set aside.
  • Cut the avocados and scoop into a large bowl.
  • Add 1/2 lime to the bowl with avocado and mash with a fork until ingredients are mixed together and guacamole is still slightly chunky. Stir in 1 tsp Childlife Essentials First Defense and mix evenly.
  • Top sweet potato rounds with guacamole, crispy bacon, crumbled feta, and cilantro. Enjoy!
