Preheat the oven to 400°. Wash and dry two sweet potatoes, and slice them into 1/2-inch thick rounds. Lightly coat with olive oil, sprinkle with salt, and place on a baking sheet.
Bake for 20 minutes, flip, then bake for another 10 to 15 minutes, or until rounds are cooked through and crispy on the edges. Place sweet potato rounds on a serving platter and allow them to cool.
Cook 4 slices of bacon over medium heat, flipping occasionally, until crispy, about 5 minutes. Transfer bacon to a cutting board and chop into pieces once cool enough to handle. Roughly chop the cilantro and set aside.
Cut the avocados and scoop into a large bowl.
Add 1/2 lime to the bowl with avocado and mash with a fork until ingredients are mixed together and guacamole is still slightly chunky. Stir in 1 tsp Childlife Essentials First Defense and mix evenly.
Top sweet potato rounds with guacamole, crispy bacon, crumbled feta, and cilantro. Enjoy!
