Iron Berry Blocks

Ingredients
  

  • 1 cup water divided – plus more if needed
  • 2 pounds strawberries quartered
  • 4 packets unflavored gelatin
  • 1 ½ cups monk fruit sweetener
  • ¹/₃ cup ChildLife Liquid Iron

Instructions
 

  • Combine ½ cup water with strawberries in a large saucepan over high heat and bring to a boil, mashing the berries to soften. Reduce heat to medium-low and simmer for 8–10 minutes, or until berries are very soft. Mash with the back of a spoon.
  • Meanwhile, put ½ cup water in a small bowl and sprinkle with the gelatin. Whisk immediately to combine. Let sit for 5 minutes.
  • Place a strainer over a bowl and pour the berry mixture through the strainer, pushing the juice through with the back of a spoon. Measure the juice. Add water to make 3 cups.
  • Rinse saucepan and pour the strawberry juice into in with the monk fruit sweetener, heat over medium-heat, stirring until the sweetener is dissolved. Reduce heat to low, add the gelatin to the mixture and heat, stirring, for 2 minutes. Skim any foam from the top of the mixture. Let cool.
  • Stir in the ChildLife Liquid Iron.
  • Line an 8×8-inch pan with plastic wrap, allowing the plastic wrap to overhang the edges. Pour the strawberry mixture into the prepared pan and refrigerate for 4–6 hours.
  • Cut into 16 one-inch squares. Serving size, 2 squares each.

*Adjust the amount of Liquid Iron for your child’s age. This recipe is for children 4 years plus.
